2 Minute Paleo Banana Bread

2 Minute Paleo Banana Bread - In the Microwave!

Look, you can say what you want about the Paleo diet - that it's a trend, that there's no such thing as Paleolithic-era baked goods…whatever. But there is one thing that you cannot deny, and that is that this 2-Minute Paleo Banana Bread that you can make in your microwave is to-die-for delicious.

Packed with protein and sweetened only with the natural sugars from the banana and the honey (which is optional, by the way), this single serving-sized delight is perfect for breakfast, or any other time of the day for that matter. Go on…even you non-Paleo foodies are going to love this one!

Time to Hunt & Gather Your Ingredients!

Get it? Paleo bread? Hunting and gathering? See what I did there?

Right. Moving on…first, gather all the things you'll need:

1 banana

1 egg

2 tbsp almond butter

1 tbsp honey (optional but recommended)

Dash of cinamon

1/4 teaspoon baking powder

Walnuts (optional)

Mix and Mash

Mash the banana into the (standard sized) mug that you want to use. Add the egg, almond butter, honey, cinnamon, and if you're using them, the walnuts.

Mix all ingredients together until smooth, being careful not to overwork the mixture. Yep. That's it. So easy it hurts.

Time to Cook!

Place mixture in microwave for 1 minute 50 seconds at 700 watts. If you are using a standard-sized mug to hold your mixture, you will want to put a plate or saucer underneath the mixture, as it will overflow. I love watching this part. It feels very "science-projecty."

Keep an eye on your mixture. When the top appears dry, it is done.

Ready, Set…Eat!

You can either eat your banana bread straight from the mug (my preferred method), or allow it to cool to room temperature, then carefully decant it from the mug and arrange it artistically and serve. Bon Apetit!
