3 Simple Ceviches
If you have read my previous Instructable 3 Simple Salsas "Pico De Gallos". Than you can proceed with 3 Simple Ceviches.

You Will Need
1. Classic Salsa (Pico De Gallo)
2. Avocado Salsa
3. Mango Salsa
*see previous Instructable to make the above 3 Salsas
4. Raw shrimp
5. Raw fish (tilapia)
6. Lime juice

Dice Shrimp
Cut shrimp to 1/2 inch cubes and place in mixing bowl.
Dice Fish
Cut fish into 1/2 inch cubes and place in the mixing bowl with the shrimp.
Cut Limes and Get Squeezing.
Cut limes and squeeze lime juice over the fish and shrimp in the mixing bowl. You may have to cut 5-10 limes.
Keep juicing until the juice reaches the top of the fish and shrimp.

Refrigerate and Wait
Place the bowl in the refrigerator for approximately 1-2 hours. When the flesh of the shrimp and fish turn white from the acidity in the limes the ceviche is ready to add to your Salsas.
Drain Juice From Ceviche
Drain the juice from the ceviche and add it to your Salsas.
Mix evenly and serve with crackers or tortilla chips.
