African Peanut Bites, Coffee Time Snack. Super Easy.

I am back :).

I can't tell you the feeling I have at the time of writing this instructable after more than 6 months. It is just pure bliss. I missed you so much.

Story time.
Few days back I saw a tiny recipe article in my Sunday newspaper about an African sweet called Kanya (pronounced Kanyah). The simplicity of the snack struck me and I decided it give it a try. I am so glad I tried it, it tastes awesome.

What is even more awesome that Snack food contest is going on :) (You know what I meant)

Preparation Time: 30 minutes
Servings : About 25 bite size cubes.
Vegan: Yes
Vegetarian : Yes

Are you ready? Wear your kitchen armor and head towards that divine place :).

What All You Need

The best part about this recipe is that it only requires 3 ingredients which I believe are available in almost everyone's kitchen. They are

  1. Roasted peanuts 1 1/4 cup
  2. Rice Flour (I have organic, but that is your choice) 1 cup
  3. Sugar 1/2 cup
That's it??? yes , that is all my dear.

Kitchen Tools:
  1. A medium deep pan or skillet to toast the flour
  2. A food processor or mixer-grinder
  3. A small casserole dish.

Now plug-in your mixture grinder and jump to next step:)

Preparing the Mixture.

In a grinder jar:

  1. Mix sugar and roasted peanuts
  2. Grind them to form a loose sand like texture (See picture 1 above)
  3. Keep this mixture aside.

Now turn your stove on
  1. Put rice flour in the skillet and toast over medium-low heat until golden brown (See picture 2 & 3 above before and after toasting)
  2. Mix the hot toasted rice flour along with sugar & peanut mix and grind (Picture 4) for few seconds.
  3. Stop grinding, take a small quantity of mix in your hand and press it firmly (Picture 5)
  4. If the mix retains its shape, it is ready. If not, then grind again for few seconds and repeat to test.
While grinding this mixture, the heat from rice flour will melt the sugar a bit and also release some oil from peanuts, this is the science behind the binding of mixture. Forgive me for being over simplistic here :).

Now spread the mixture in casserole dish evenly and press firmly with your hands or put another dish on top of it and press firmly.

Take a sharp knife and cut the mix in squares. If you are not able to cut the mix in squares, that means mix is not ready. But don't worry, simply scrape the mixture, put it in grinder and repeat above steps. You will be just fine. :)

Wait for few minutes to adjust the mix with room temperature.


Serve

Prepare some coffee or Chai (Holly has recently posted a delicious Indian Chai instructable).

Garnish Kanyah bites with some roasted peanuts (See image above) and enjoy with your cuppa :).
