Apple and Walnut Moaf

Moaf: Something between a muffin and a loaf.

This is the first moaf I've made, and the first instructable (to my knowledge) to show how to make a moaf. And besides, I just like saying 'moaf' over and over. Moaf.

A moaf is enjoyed as a weekend snack or with a coffee at afternoon break.

Ingredients

  • 135g flour
  • 30g Sourdough Starter
  • 1/2 cup stewed apple
  • 1/2 tsp cinnamon
  • 1/2 cut chopped walnuts
  • zest of 1 lemon
  • 100g concentrated fruit juice
  • 100 mls water
  • 1/3 tsp baking soda
  • 50g melted butter
  • 2 tsp apple cider vinegar

Mixing

Mix together flour, sourdough starter, stewed apple, cinnamon, and lemon zest.

Now add the fruit juice concentrate and water then mix together.

As with all sourdough recipes, set this aside overnight and continue next day.

Melt your butter and add in baking soda...then mix this into the sourdough batter.

Prepare Your Baking Dish

Pour the batter into your baking dish (we've used ceramic ramkins) and bake for 30 minutes at 180C (360F).

Once the moaf has cooled, ease it from the ramkin and place on a rack to cool.

Try serving with:

  • vanilla ice cream and maple syrup
  • soft whipped fresh cream
  • dust lightly with a cinnamon/sugar mix
