Artichoke and Asiago Dip

The key to great artichoke dip is in the cheese and asiago is absolutely the best.

You will need:

Mayonnaise

Sour Cream

Artichoke hearts (plain or marinated according to your prefernce)

Fresh Garlic

Asiago cheese

Mix and Blend

First, strain your artichoke hearts. For a small jar, add 2-3 tablespoons each of mayonnaise and sour cream. For a larger can of artichoke hearts, double that amount. Blend the hearts with the mayonnaise and sour cream until smooth.

Mince a few cloves of garlic (to taste: 2-3 for a small batch and 4-6 for a larger batch) and grate between 1/4 and 3/4 cup of asiago cheese. Mix these into your sauce base along with a pinch each of salt and black pepper.

Broil and Serve

Optional last step: Pour your dip into one or more ramekins and broil.

Serve as an appetizer with woven wheat crackers, fresh vegetables or the cracker (etc) of your choice.
