Awesome Mexican Dip

This is a great dip that is easy to throw together and everyone seems to love it.  Excellent with tortilla chips and for making something last minute. I like to layer the dip in a glass bowl so you can see the layered effect. Enjoy!

Gather the Ingredients

1 (16 oz) can refried beans
Half of a large red pepper (or 1 small), diced (equals about 1/2 c.)
2 ripe avocados
1 tsp. lime juice
salt and pepper, to taste
1 c. sour cream
1 packet taco seasoning mix
1 c. salsa
1 to 1.5 c. shredded cheese (cheddar, colby-jack, pepperjack, or whatever you want to use)


Mash the Avocados and Season Sour Cream

Mash the 2 avocados in a bowl with lime juice. Add salt and pepper to taste.

In a separate bowl, stir taco seasoning mix into sour cream until well mixed.

Layer the Ingredients

Place refried beans into bottom of bowl and spread out until it is in a smooth layer.
Sprinkle red pepper pieces evenly over beans.
Spread mashed avocados over the red pepper.
Spread seasoned sour cream over the avocados.
Put salsa on top of the sour cream and spread until even.
Sprinkle cheese over the salsa.

Optional: You can add black olives to the top of the dip if you want - I omitted them.

Serve and Enjoy

Serve the dip with a platter of tortilla chips and enjoy!

You may want to put a spoon in the bowl for guests to put some dip on their plates.
