Baby Potato Salad
Baby potato salad with a yogurt based dressing. Serve chilled on a summer day.

Gather Ingredients
1 kg baby potatoes
1 tbsp olive oil
2 tbsp butter
2 eggs
400 g plain yogurt
4 tbsp parsley, chopped
3-4 garlic cloves, sliced
salt
Prepare Dressing
In a medium bowl, whisk the eggs. Add 1/2 tsp salt. Add the yogurt and mix well.
Cook Baby Potatoes
Heat the oil and butter in a large pan. Add the baby potatoes and cover with a lid. Cook for 20-25 minutes or until golden brown. Shake pan occasionally.
Assemble Salad
Add the chopped parsley and garlic to the potatoes. Season with salt. Add the dressing and mix well.
Chill
Refrigerate overnight or for at least 1 hour.
