Bagels From Scratch

Supplies

500g Flour

10g Salt

10g Yeast

10g Brown Sugar

300g Water

In a kitchen aid or other kitchen mixer, add all of the dry ingredients and mix until combined. While the mixer is running, slowly add the water and let it mix until combined. Keep mixing the dough until you can stretch the dough so light can go through it without forming large holes (see picture). Leave the dough in the bowl with a tea towel to prove for 1 hour or until it has doubled in size.

Once the dough has proved, GENTLY remove from the bowl and place on a lightly floured bench. GENTLY kneed the dough to knock it back. Next cut the dough into 100g portions and roll into a ball. Leave these ball under a tea towel to prove for an 1-2 hours.

Now you can preheat the oven to 200°C Once the portions have proven, use your fingertips to gently squash the ball into a flat circle (see picture). Next roll the circles in to a cylinder by tightly tucking the edge of the circle into itself. Lastly connect the two ends to form the bagel shape.

In a Wok or Large Pot, boil water. Using a slotted spoon, place the bagels in the boiling water. When the bottom looks wrinkly like your grandmas legs, flip them over. Remove them from the water when both sides a wrinkly. Let them dry off a little bit on a tea towel and then place them an oven tray. Bake in the oven until the bottoms are light brown.
