Make the Ice Cream Layer

Select a metal or glass bowl that is equal or slightly smaller than your cake pan.

Gather things needed: 2-3 pints of softened ice cream, cooking spray and plastic wrap

Spray the bowl with cooking spray and then line it with plastic wrap. Layer the ice cream into the bowl pressing it down with a spatula to remove any air pockets. Cover it with plastic wrap and freeze for 8 hours. You can do this the night before.

Make the Cake Base

Start with a white boxed cake mix.

Add the water called for on the box. Use whole eggs instead of whites and decrease the number by 1 egg. Add 1 tsp vanilla and 1/2 tsp almond extract. Mix together.

With your mixer on low speed slowly add melted butter to replace the amount of oil called for. Beat for 2 minutes. This will result in a denser cake to help support the ice cream layer.

Pour the batter into a prepared cake pan. You won't use all the batter for a single layer. You can make some cupcakes out of the remaining batter. Bake at 350 until toothpick inserted in the center comes out clean. 35-40 minutes for an 8 inch pan. Let it cool completely. Freeze for 2 hours. Level if necessary.

Add the Ice Cream Layer

Put your cake layer onto a baking sheet lined with foil or some other pan that can be put in the oven. Place your ice cream layer onto the cake and trim your cake layer if necessary.Freeze for 3 hours.

Make Meringue

In a mixer with whip attachment, add 8 egg whites and 1/2 tsp cream of tarter. Mix on medium speed for 2 minutes. They should have increased in volume and be foamy. Add a pinch of salt and turn mixer on high. In a steady stream add 1 cup of sugar. Whip until stiff glossy peaks form.

Cover in Meringue

Cover your cake in the meringue. Be sure to seal the cake completely. Frost down to the baking sheet. Work quickly make it as pretty as you can by using the back of a spoon to make swirls and peaks.

Freeze for a couple hours or up until shortly before time to serve.

Place in a preheated 500 degree oven until the meringue peaks have browned.slightly. 3-5 minutes.

At your table pour 2 tbls of dark rum over the top of the cake. Using a long handled lighter set it on fire. It will impress your family and guests.
