Banana Bread French Toast (Tropic Toast?)

Do you love bananas? Do you love bread? Do you love banana bread? What about french toast? What about combining all of those things! (full disclosure, this is more dessert than breakfast, but who cares!?)

I won't lie, I did not invent this magical pairing of banana bread and french toast. But I did feel like it was worth sharing in case you are like I once was, ignorant of brilliant idea. This is also my first instructable, created with the intention of entering the "bread" instructable contest. So I'm supposed to tell you to vote for this if you find it enjoyable I think. : )

This is a very simple process. It is essentially two short recipes which come together very nicely.

Gather Your Ingredients and Tools

Banana Bread Ingredients:

  • 2 cups all-purpose flour
  • 1 teaspoon baking soda (not baking powder)
  • 1/4 teaspoon salt
  • 3/4 cup brown sugar (how come you taste so good?)
  • 2 eggs, beaten (not stirred)
  • 2 1/3 cups mashed bananas (overripe, about 3 normal sized bananas)

Tools you will need:

  • 2 large mixing bowls
  • measuring devices (volume not length, no tape measures needed)
  • 9 x 5 loaf pan
  • spoon for mixing

French Toast Ingredients:

  • 4 thick slices of banana bread
  • 2 eggs
  • 2/3 cup milk
  • 1/4 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1 teaspoon vanilla flavoring
  • salt to taste
  • Powdered sugar

Tools you will need:

  • Skillet
  • Whisk or fork for beating eggs

Get Things Warmed Up

Preheat oven to 350 degrees F

Let butter soften (let it sit on top of the oven while it heats)

Let eggs come closer to room temp

Don't try to catch egg rolling off counter with thigh

Combine and Conquer

In a large bowl, combine flour, baking soda and salt.

In a separate bowl, cream together brown sugar and butter

Mix It Up a Little

Add eggs and bananas to sugar/butter mixture

Stir this mixture into flour mixture, stir just enough to moisten

Pour batter into greased loaf pan (don't pack it in, just plop it down in there)

Bake for 60-65 minutes

Don't Let It Burn!

Check after 60 minutes for doneness. Using a toothpick, stick it into the loaf. If nothing sticks to the toothpick, its done! If not, place it back in the oven for a few minutes at a time until done.

French Toast It

Using ingredients from french toast part:

Cut bread into 3/4 inch thick slices

In mixing bowl, beat eggs and milk

Mix in sugar, cinnamon, nutmeg, vanilla, and salt

Heat skillet with small amount of butter

Dip each slice in egg mixture, place in skillet and cook until golden brown on both sides

Give It a Little Sugar (or a Lot)

Now you just need to plate and add some powdered sugar

I also added a little cane syrup because why not, in for an inch in for a mile.
