Banana Bread Muffins
Banana bread muffins are a great way to incorporate fruit into your diet. While the vitamin C and fibers in bananas are lost in the baking process, bananas are still a great source of potassium and anti-oxidants. A sweet fruit, banana tastes great in bread. 2 c. Flour
1 1/2 c. Vegetable Oil
1/2 tsp. Salt
1 tsp. Baking Soda

Dry Measuring Cups

Preheat Oven to 350°
Add Wet Ingredients
Combine bananas, eggs, oil, and sugar in a medium bowl. Mix well.
Sift Dry Ingredients
Use a sifter to remove large lumps from the dry ingredients.
Add Dry Ingredients
Add sifted dry ingredients to banana mixture. Mix until combined. Do not overmix.
Add Mixture to Muffin Tins
Full soufflé cups halfway with banana bread mixture. Place the cups in a muffin tin.
Place in Oven
Bake the muffins for 25-30 minutes.
