Banana-pecan Bread (No Mixer Needed!)
I'm not much of a cooker but I did learn how to make banana bread from my sister who's a culinary arts major! We bonded over this and I love a quick on the go breakfast like this.
Supplies
- 8 x 4 inch loaf pan
- 2 to 3 medium sized bananas (ripe)
- 1/3 cup of melted butter, salted or unsalted
- ½ teaspoon baking soda
- 1 pinch of salt
- ¾ cup of light brown sugar
- 1 large egg, beaten
- 1 teaspoon vanilla extract
- 1 teaspoon cinnamon
- ½ cup of pecans
- 1 ½ cups of all-purpose flour
Prep
Preheat your oven to 350 degrees and prep your pan with butter
Mash Your Bananas
In a mixing bowl, mash your bananas with a fork until completely smooth. Once smooth, add your melted butter to the mixing bowl.
Mix Ingredients
Mix in your baking soda and salt together, stir in the sugar, beaten egg, cinnamon and vanilla extract. Add into the mixture.
Add Flour, Pecans
Once combined, add in your all-purpose flour and pecans to the mixture. Mix thoroughly.
Bake
Pour your batter into your prepped loaf pan. Bake for 55-60 minutes at 350 degrees or until a toothpick inserted into the center comes out clean.
(no wet batter)
Cool and Serve
Let the banana bread cool then remove from pan. After removal, let the loaf cool completely before cutting your loaf and serving.
Finished Result
Enjoy!
