Place muffin liners in a 12 hole baking tray. As I have followed this recipe for years now, I know I will get exactly 12 muffins.

Prepare Chocolate Chips

Take 2 table spoons of flour and coat chocolate chips with it. The aim is to evenly distribute them throughout each muffin. I like to shake off excess flour using a sieve. Once done, set aside.

Prepare Dry Mixture

I like to prepare the batter in 2 bowls. Let's prepare dry mixture by adding flour, baking powder, baking soda and salt and please sieve it to ensure there are no lumps. Set aside and move on to the next step.

Prepare Wet Mixture

Peel off and mash bananas using a fork.

Add oil to mashed bananas and whisk to combine.

Add eggs, and please add one at a time.

Now it's time to add sugar and give a mix.

Finally add vanilla extract and mix.

Combine and Finish the Batter

Now it's time to combine both mixtures.

Add the flour mixture in wet mixture in batches. Add 1/3 at a time and fold in gently. Do not over mix.

Finally add chocolate chips and give one last mix and we are done with the batter.

Fill Up Muffin Liners and Bake

I love using an ice cream scoop to pour batter into cases. It is the best way to eliminate mess and also to get same sized muffins which looks awesome. Pour one full scoop of batter into each case and then bake for 12-15 minutes. Time varies from oven to oven.

Let Them Cool!!

Once out from the oven, let them cool inside the pan for 5-7 minutes.

Transfer them into a cooling rack to cool down completely.

ENJOY!!!
