Bloody Black Pot With Bones

Tomato soup? Nope.

But someone got pureed. And . there . is . splintered . bones . in the soup.

Serve this totally healthy, innocent, and vegan but seemingly gross soup in a black pot with "bones" to disgust, or present it in a typical way for just a simple, easy, healthy, comforting fall soup.

Ingredients

2 1/2 c. peeled and diced potatoes (4 medium)

2 1/2 c. peeled and diced carrots (4 medium)

2 1/2 c. peeled and diced red beets (1 very large)

2 medium onions, chopped

4 cloves garlic, minced

4 c. water

1 to 1 1/2 Tbsp. salt

1 large pinch dried basil

4 Tbsp. coconut cream (non-vegans may use dairy cream)

Cook

Place the potatoes, carrots, red beets, onion, garlic, and water in a medium pot and simmer with lid till the vegetables are soft, 30 to 45 min.

Puree

Puree the soup with an immersion blender or in a stand blender.

Return the pureed soup to the pot and add salt, basil, and coconut cream (or dairy cream), stirring well.

Serve

Serve the soup warm.

For a disgusting "Bloody Black Pot with Bones," serve in a black pot and sprinkle the soup with sunflower seeds.

Yields: 4 servings as main dish or 8 servings as appetizer

Ingredients

Instructions

1. Place potatoes, carrots, red beets, onion, garlic, and water in medium pot and simmer with lid till vegetables are soft, 30 to 45 min.

2. Puree soup with immersion blender or in stand blender. Return to pot and add salt, basil, and coconut cream.

3. Serve warm.
