Blueberry Papaya Ice Cream Pie
First time posting here, go easy on me
Amazing for a dessert after dinner, after lunch, or after breakfast, this pie can do it all! Made with simple ingredients and minimal prep time. You can literally make it for every meal of the day (not recommended).
Also, just because the title says that it is a blueberry and papaya pie doesn't mean that you cant put other fruits in it, it just has to be a "fruit" (sorry tomatoes). serving size if for 2, or 1 person if you don't feel like sharing
Supplies
130g all-purpose flour
55g cold butter
40 ml of water
120g of fillings
50g sugar (white)
pinch of salt
Toppings, add your own amount:
Ice cream, or a gutted ice cream cone if you ran out like me
Equal parts coarse sugar and brown sugar
Preparation
Cut and dice 120 g of papaya and blueberry. Put in a bowl and sprinkle some sugar (amount depending on the ripeness of fruits, usually enough to cover). Wrap it with cling film and shake. put in the fridge for 30 mins or overnight.
NOTE: don't preheat oven yet
Crust Making
Mix all the dry ingredients and sugar, add chopped bits of butter. squish it with a fork until the butter is the size of tiny pebbles. add water and knead. Be careful to not overdo it. The dough is done once it resembles play-doh but is still a bit flakey. wrap in cling film and put in the fridge for 30 mins to let the ingredients get to know each other. (square shape optional)
Pie Time
Preheat oven to 200°C, or 400°F if you are American. Then take the cold dough and liberally flour a working surface (use more than you think you need for this one). Roll out the dough in one direction, then turn 90° and roll out that way. Repeat until it is about the size of a small pizza and 5mm thick. 1/5 inch if you are American. line a baking sheet with parchment paper and flour that was well. put the crust on the sheet and put on fillings. Fold the edges into a hexagonal shape and slightly crimp. At this point, you can add the toppings and bake for 40-45 mins on the middle racks.
Fruits of Your Labour
Take out once golden or lightly browned. Put in fridge for about 30 mins, add ice cream and dig in!
