Blueberry Periogies

This is a twist on a traditional polish dish that is just a little healthier. I made a batch of these with my nephew while he was visiting. Its a great dish to look with kids!

The ingredients you will need include:

1 egg
flour
firm tofu
lemon juice
agave syrup
blueberries

The equipment you will need include:

a pot of boiling water
a frying pan

Start With an Egg

Break an egg into your mixing bowl.

Add Tofu and Lemon Juice

In traditional periogies, you normally add sour cream. This is a substitute for the dairy. For one tablespoon of sour cream, add one tablespoon of firm tofu and one teaspoon of lemon juice.

Add Flour and Oil

Add flour and oil to form a dough like consistency. If the dough is sticky, add more flour.

Roll Out the Dough.

Dump out the dough onto a rolling surface (I use a cutting sheet because its easy to clean.) and roll it out. If it is sticky, sprinkle flour over the surface and work it into the dough.

Cut the dough into segments, and make a little pile of blueberries on each segment. Fold the dough over and seal the packet.

Add to a Pot of Boiling Water

Salt a pot of water and bring it to a rolling boil. Carefully place each of the periogies into the water. They will float when they are ready to remove from the water.

Saute in a Hot Pan

Once they are boiled, transfer them into a hot pan and brown them. I use a non-stick pan, but you can include butter if you prefer.
