Boozy Banana Bread

This is a delicious way to get (a wee bit of) your drink on. There's not enough liquor in the mix to get you dancing on tables, but there is enough to add an additional layer of flavor to this yummy dessert staple.

Let's begin!

The Recipe

  • 2 cups all-purpose flour
  • 1 tbsp baking powder
  • 1/2 tsp salt
  • 1/2 cup room temperature butter
  • 1 cup sugar (I used white)
  • 2 large eggs
  • 3 medium mashed very ripe bananas
  • 1 tsp fresh squeezed lemon juice
  • 3 tbsp spiced rum
  • 1 overflowing cup of small, semi-sweet chocolate chips

Preheat the Heat Box

Preheat your oven to 350 degrees F.

Dry Goods

In a bowl, thoroughly mix together the flour, baking power, and salt.

Set aside while you mix the rest of their ingredient friends.

Time to Get Wet

In a medium sized mixing bowl, add the butter and sugar. Mix (by hand or with a mixer) until fluffy-ish.

Add the eggs and mix again.

Scrape the sides and mix in the mashed bananas, lemon juice, and spiced rum.

Stir it up until all is blended well.

Now mix in the dry ingredients.

The Main Event

Next, add a nice, heaping cup of chocolate magic.

Getting Prepared

Prepare you loaf pan by spreading on an even coat of butter and then dusting it with flour.

Pour Some Sugar (and Nanas, Flour, Etc.) on It

Pour your batter into the prepared pan.

Place in the oven and back for 50-60 minutes or until a toothpick comes out clean after being inserted into the center of the loaf.

When done, remove from the oven and allow to cool in the pan for 15-20 minutes.

Then turn the pan upside-down to remove the loaf, and turn the loaf right side up again to cool.

Allow to cool almost completely before cutting.

Slice and serve with Irish coffee.
