Borracho Beans AKA Tequila Beans
This was an attempt to recreate the AJ Spurs Tequila Beans recipe. I know it sounds gross, but it's actually really good. After cooking them for a while the alcohol cooks off and you are left with a smokey, rich flavor that is rather unique.
Ingredients
1 cup dried black beans (or 30oz can of Black Beans)
2 Tbsp crushed Garlic
2 tbsp Olive Oil
1/2 cup tequila (I use the cheap stuff)
1 tsp salt
1 tsp black pepper
1 tbsp cumin
2 Tbsp cilantro
1 tsp lemon juice
1 cup chopped (turkey) bacon (about half a package)
water
2 Tbsp crushed Garlic
2 tbsp Olive Oil
1/2 cup tequila (I use the cheap stuff)
1 tsp salt
1 tsp black pepper
1 tbsp cumin
2 Tbsp cilantro
1 tsp lemon juice
1 cup chopped (turkey) bacon (about half a package)
water
Soaking the Beans
1.If you choose to use fresh beans, you will need to soak them in water for 24 hours in a large pan full of water (they soak up a lot of water so make sure the pan full and refill if needed). you can use canned beans for this recipe, but it is better if you use fresh beans.
2.After Soaking, you will need to drain & rinse beans, then set aside.
3.If you are still planing on using canned beans like a lazy bum, make sure to drain the beans of all their juice and rinse them good. Then you can go ahead and skip to the next step,... Lazy Bum!!!!
Cooking the Beans
Note: I made a double batch while taking the pictures for this instructable. Just in case you thought it looked like a lot.
1.In large pot, brown garlic in olive oil with cumin.
2.Add beans, and fill with water until beans are completely covered, then add everything else.I use a set of kitchen scissors to cut the bacon into chunks after everything else has been added.
3.cook on low heat, with the lid on, stirring occasionally, for at least an hour. The longer the better in my opinion (add more water if needed).
5.Remove lid and cook until beans thicken. about another hour
6.Refrigerate overnight then reheat. ( this step is optional, but the beans will taste so much better the next day. So don't be a lazy bum).
