Brinjal and Onions Curry
Hello friends :)
Today I have made BRINJAL and ONIONS Curry with healthy herbal beneficial spices.
Supplies
Ingredients Required
- Two small size brinjals
- Two small onions
- Two green chilly
- One teaspoon of Cumin seeds
- one teaspoon of turmeric powder
- two garlic cloves
- One Bay leaf (tej patta)
- Dry curry leaves
- One small tomato
- Mustard oil or any cooking oil
- Red chilly powder,1tsp
- Salt, as per your requirement
- Mango powder (skip as well)

Wash all the vegetables with water and clean with a dry kitchen towel.
Chopped tomato, garlic cloves, and green chilies into smaller pieces of cubes.
Cut the onions bulbs into big chunks, not in smaller pieces.
Slit each brinjal into four halves and brush the cooking oil around the outer and inner parts of both of the brinjals, it will prepare for roasting.
First, roast the brinjals with the help of a roasting pan on a gas stove burner, after that let them cool down and peel their outer layer carefully with the help of the knife.
After that place, your cooking pan on the burner and let them a little pre-heated, then add cooking oil as per your availability I have used mustard oil which is good for the heart as it is a low amount o saturated fatty acids and a high amount of monounsaturated fatty acids. Add on cumin seeds as per the above-mentioned quantity, its color will change then add a bay leaf, dry curry leaves both gives aromatic flavor, beneficial for health as well.
After roasting spices add on chopped onions and saute them on low flame till it turns into light golden pink , it takes 3-5mins on the high flame burner.
now add chopped tomatoes, green chilies, and garlic cubes cook them till they become smashy thereafter add on powder form spices i.e., chilly red powder, mango powder (amchur), and turmeric powder one by one, and let it mix and
cook for 2mins. if all oil will evaporate you can add a little bit of water to make thick gravy curry.
nearly about to ready, now add roasted peeled brinjals into the curry also salt according to your taste requirements. let them mix with all the ingredients and flavors and squash them for about 3-5mins. if required add a little bit of water or according to your need if you want thick curry don't need otherwise add some water and cook them for about 5min with a cover on the lid.

Brinjal and onion curry is ready with tangy (because of tomato and mango powder) and spicy( green chilies and chilly red powder). You can serve it hot with tacos or flatbread.
