Brittle Chip Candy
This easy 3-ingredient candy takes a brittle and turns it into delicious chocolate bark.
You will need:
- 1 cup white sugar
- 1 cup raw almonds (or other preferred nut)
- 12 oz semi-sweet chocolate
- parchment paper
- a frying pan
- butter for greasing
- food processor
- 1 Tablespoon coconut oil or shortening for melting chocolate
Make the Brittle
Generously butter a dinner plate or a large, flat surface. I used a glass cutting board.
Add sugar and almonds to frying pan.
Cook on medium heat, stirring continuously until the sugar has melted and the almonds are making a "popping" sound.
Pour Brittle Onto Buttered Surface
After almonds pop, immediately remove the brittle mixture from heat and pour it the buttered dish. Spread the mixture as thin as you can but take care as it is very hot.
Cut Brittle and Process Into Smaller Pieces
Once the brittle has cooled, cut it into pieces and place it in a food processor. Process it until it is in small pieces, no bigger than a half-inch. Don't worry about the crumbs, they are perfectly fine.
Melt Chocolate
Put your chocolate in a microwave-safe bowl with a half tablespoon of coconut oil or shortening. Microwave at 30-second intervals, mixing in-between, until chocolate is melted.
Combine the melted chocolate with your chopped up brittle.
Spread Chip Candy Onto Prepared Baking Sheet
Spread the chocolate and brittle mixture onto a baking sheet lined with parchment paper.
If you want to decorate your brittle, add chopped nuts or drizzle melted chocolate on top. We drizzled melted white chocolate on top of ours.
Allow brittle to sit at room temperature until it has hardened.
Cut and Serve
Once your chip candy has cooled, cut into desired pieces and serve. Store in an airtight container for up to 3 days.
