Brownie IceCream Bars

These Yummy summer treats were born out of sticker shock in the frozen section of my local grocery store. I have a real tough time paying between $5 and $7 for ice cream. These are a great treat for the kids and a good deal for the budget($1.67 for the brownies and $1.99 for the ice cream)

A few things to note before we get going.

1.)This recipe is based on a brownie mix for a 9x9 pan. You can use a bigger mix to double your batch but the brownies get really crunchy instead of chewy(don't ask me why).

2.)The list of what you need is in addition to and/or instead of what what you will need to make your Brownie mix.

3.)In the photos I have sliced my Icecream thin enough to make two batches of bars. Slice yours as thick as you would like. You will be working with a brownie roughly 10x7 just do some quick measuring and work it out.

4.) This is my first instructable. Please be kind.

What You Will Need

Here's what you will need
1 Box Brownie mix
1 1/2 Gallon IceCream
3 Cookie sheets (1 large 2 small)
1 Rubber spatula
1 large/long knife
Plastic wrap
Waxed paper
(again this list does not include brownie ingredients)

The Brownie Pt1.

1.) Follow the directions on your brownie mix substituting your two small cookie sheets for your baking pan.

2.) Divide your mix in half on the two cookie sheets and make 2 rough rectangles of about the same size.

3.) Bake for half the time on your directions, and turn the oven off when your timer goes.

4.) Leave the brownies in the oven for another 5-7 minutes. They will appear slightly under-done when they are ready.

5.) Set them aside on the pan to cool.

The Icecream

This bit you need to work fairly quickly.(with that in mind forgive the lack of "un-boxing photos of the Icecream)
1.) line your large cookie sheet with waxed paper

2.) un -wrap your ice cream and slice into appropriate sized bars(thinner equals more bars thicker equals more in a bar)

3.) at this point they will need to go back to the freezer (see you in an hour)

The Brownie Pt2.

From here we'll just assume your brownies have cooled and your Icecream is re-frozen.

1.) Line your work surface with waxed paper

2.) Using your spatula some finess and foul language(as necessary) loosen brownies and invert one onto your work surface.

3.) Use your knife to trim away the crispy edges and you should be left with a rectangle about 10x7

4.)Repeat the flip and trim process and set one brownie aside and one on top of one of your small cookie sheets.

IceCream Pt2

1.) Lay your Icecream bars out on one half of your brownie.

2.) Using the waxed paper to help you flip the other half of the brownie onto the top of your Icecream.

3.) Depending on how things went for you you may want to re-freeze. ( I had some trouble getting the bars off the cookie sheet notice I had to cut them again to make them play nice)

Home Stretch

Once your whole brownie assembly has re-frozen cut the bars to the size you want and wrap in plastic wrap. You can use the wrapping process to repair any of the smushed bars as you go. One last time to the freezer and you're done.

Just look at those faces what could be better than homemade Brownie Icecream Bars? Total cost $3.66 for a single batch. The next batch is even cheaper just $2.63 (remember I sliced my Icecream thin enough for 2 batches) That's $.30 and $.22 for each bar. I can hear the grocery savings adding up everytime I make them.
