South African Bunny Chow - Curry Filled Panini
This a truly South African dish that you can easily replicate at home. It's been a staple of the country for a very long time as it combines 2 things we love here - curry and affordable cuisine.
Originally the people would take half a loaf of bread, cut it in half and scoop out the center, serving the curry inside to hungry workers. Nowadays, it is still served this way haha but for people like me and perhaps you (have half loaf if you must), we prefer to eat a reasonable sized serving because dessert may follow!

Yes, you may use ANY curry. If you don't like spicy foods, omit the curry flavour. Use your favorite curry recipe.
Serve with the original sides of sliced onion, grated carrots, the remaining inside of the bread and some herbs because is it bunny food without that?
Supplies
Vegan CURRY
2 tablespoons Masala Powder (medium heat for me) adjust to your preference of heat.
1/2 Onion
3 tablespoons Vegetable Oil
3 - 4 Potatoes, chopped
200g Mushrooms, sliced
1 can Black Beans
1 can chopped Tomatoes
1 cup Water
BREAD
I used a mini panini ( as the shop called them), you may use a roll or any other cute bun you can find.
SIDES
Sliced Onion
Grated Carrot
Coriander or your fave Herbs
The left over filling from the roll.
Ingredients
Get your ingredients prepped.
2 tablespoons Masala Powder (medium) adjust to your preference of heat
1/2 Onion
3 tablespoons vegetable Oil
3 - 4 Potatoes, chopped
200g Mushrooms, sliced
1 can Black Beans
1 can Chopped Tomatoes
1 cup of water
Fry First
First step is to add your onion slices, curry powder and oil to a large pan and heat over a low temp for 4 minutes
Cook
Add water and can of tomatoes .
Once boiling, add the potatoes and cook until the potatoes are just tender. Taste one to check.
Add the mushrooms and black beans.
Season with salt and pepper.
Prepare the Bread
Take your panini, roll, bun.
Carefully slice a square shape around the top. Do not slice right through.
With a spoon, scoop out the top contents of the bun. Keep this for serving.
Butter the inside of the bun.

Prepare your sides
Grate the carrots
Slice the onion
Wash your herbs
Serve
Time to serve, plate up your bun, stuff with the curry. Add the sides and enjoy a truly South African dish.
