Buttery Avocado Bagel Spread

 This simple Avocado recipe is my idea of Bagel Heaven. 

This recipe was inspired by my friend Kimberly... who just happens to make the best, most amazing Bagels (and pizza!) in all of Baja California!

It was also inspired by my favorite Avocado Spread at  a now-defunct chain restaurant  called The Bagel Bakery. 

These Jalapeno-Cheese Bagels are da bomb with (or without) my Creamy Avocado Spread!

This recipe makes enough Avocado Spread for 2 large Bagels.  You can also use it as a spread on Bacon-Tomato Sandwiches or English muffins. 

Let's get started...

Ingredients you'll need:
  • 1/2 large ripe Avocado
  • 2 oz. Cream Cheese-soft room temperature
  • 1 Tablespoon Butter
  • 1/2 teaspoon Garlic Seasoning Salt 
Cut the avocado in half lengthwise. Twist and separate the halves. Cover the half that holds the seed with plastic wrap and put it in your refrigerator for future use.

With the remaining avocado half,  use a knife to carefully cut the avocado meat in thin slices. Don't cut through the avocado shell.
You'll be using it to hold the Avocado spread.

Put the cream cheese, butter and garlic seasoning salt into medium mixing bowl.  With a spoon, scoop out HALF of the avocado meat and add it to the bowl.  With an electric mixer, Mix/whip until fully combined... light and fluffy, too! :-)

Scoop the remaining avocado meat into the cream cheese mixture. Fold it in gently with a wooden spoon. This gives your avocado spread an amazing light-but-chunky texture. 

Spoon the avocado cream spread back into the empty avocado shell. Cover with plastic wrap and refrigerate until serving time.

Yum-yum-yummy stuff, I tell ya!!!! ;-p~~ Best Bagel/sandwich spread ever... in my humble opinion!
