Cauliflower Tortillas

As a Mexican teenager, tortillas are part of my daily diet. I literally eat them with anything every single day. It is very comforting to go home after a day full of activities and have quesadillas for dinner. They are easy and fast to make, plus don’t require many ingredients. They are a typical mexican dish with a delicious taste. The idea of making tortillas out of cauliflower came when I noticed that many of my friends who were on “no-carbs” diets where not able to include normal tortillas in their diets. They really seemed to have trouble when deciding what to eat because tortillas had been such an important part of their diet. These cauliflower tortillas are a perfect healthy substitute for normal tortillas that still maintain that great traditional taste of comfort.

Ingredients

  1. 1 Cauliflower
  2. 1 egg
  3. Salt
  4. Pepper
  5. Coriander

Materials

  1. Food Processor
  2. Cutting board
  3. Knife
  4. Bowl
  5. Spoon (any tool to mix)
  6. Cloth (Cheese cloth works best)
  7. Oven

First Steps

  1. Preheat the oven to 350°F
  2. Rinse the cauliflower in cold water
  3. Cut the cauliflower in small florets

Chop the parsley into fine pieces

Food process the florets until it has a rice-like texture and size

Put rice in microwave for about 5 min (check to see if it is cooked after 5 min, if it is still raw cook for an extra minute or as much needed)

Put the cooked rice in towel and take away all the excess water

  1. Put rice in a bowl
  2. Add the egg
  3. Add the spices

Mix ingredients, you should end up with a thick consistency (If your consistency is not thick enough put the dough in the cloth and take away excess water like you did with the rice)

Eighth Step

  1. Cover a cooking tray with parchment paper
  2. Put palm size balls of the cauliflower lined in the parchment paper
  3. Evenly spread the dough of each ball to form flat circles

Ninth Step

  1. Cook the dough for 25 min in an oven at 350 degrees
  2. After 25 min flip the tortillas
  3. Cook the tortillas for another 25 min

Final Step

After the 25 min your tortillas will be ready

With your freshly made tortillas you can make yourself some delicious quesadillas
