Cfs - Chicken Fried Steak.

As a child, my parents would travel a lot. Of course you had to eat out. I was always fed chick fried steak, mashed potatoes, green beans, gravy, and salad.  To be honest it was a real treat, since we never had it at home. For some reason, we wanted to have it at home to have a bit of nostalgia for those good times.

Note: CFS aka chicken fried steak has it variations and also know as Bistecca alla Milanese, Wienerschnitzel, and many other names. Oops, there is no chicken in this dish. You could use chicken or pork though.

What's Needed.

Salad - We just used cut up juicy Roman tomatoes and cucumbers.
Green beans as a side dish. (warm up some from a can.)

Mashed potatoes:
1 large russet potato.
Salt.
Pepper.
Garlic powder.
Buttermilk.
Sour cream.

Cfs -
1 small steak of your choice. (You could use chicken if you truly wanted truth in advertising).
1 cup - Buttermilk (or 1 cup milk with a tablespoon of vinegar or juice made the night before)
1/2 -3/4 cup all purpose flour.
Salt.
Pepper.
Garlic powder.

Mashed Potatoes.

Take one potato (or more) and wash well. We like the skins on our mashed potatoes as it seems to add more flavor.
Sliice the potato in 1/2 sections and put in to a pot.
Add water to the pot until the potatoes are well covered.
Heat the pot on medium high until you get a boil.
Keep boiling the potatoes until knife or fork tender.
Turn off heat.
Drain the potato slices in a colander and return to the pot.
Add the buttermilk, Sour cream, and spices to taste.
Mash the mixture all together.
Add additional salt and pepper as needed.

Note: Some people like to add green peas to this mixture.

Steak.

Choose a portion size steak of your choice.
Take a steak and put it in a plastic bag without sealing the bag.
Mash the steak until tenderised. This also spreads out the steak so it seams larger than it is.
Add seasonings and Buttermilk in the bag and seal.
Put the bag in the fridge to marinate at least several hours.
After several hours, dredge the meat in some all purpose flour. Cover well, but shake off excess. (not shown)
Cover the meat and let the steak firm up in the fridge for at least a half hour.
Take the meat out of the fridge and saute in a lightly oiled frying pan until golden brown. (too much oil willhelp remove the future crust from the meat).

Note: During hard times meat was tenderised and breaded to spread the meat resources farther. In fact, I have seen a recipe where whole oats and onions mixture was used to completely replace the meat.

This is the final dish. Forgot to picture the green beans on the side. You may not want to eat this all the time, but you will never forget this dish, That is especially true if you grew up in the southern United States.
