Cheesy Fruit Tart

This is something I created with my kids in mind.  With their allergy to food dye, it is really hard to find yummy treats for them that are not colored with some sort of dye.  My kids constantly ask me to make this, as it is one of their favorite desserts.  It is simple and easy to make and to make your own.  It is also a nice cool treat in the summer time.  I hope you enjoy it, like we do.

Getting Started....

First off you need to gather all of your ingredients together.

Approx. 18 oz of sugar cookie dough.
1- 8 oz package of cream cheese, softened.
1/4 cup sugar.
1- 8oz tub of frozen whipped topping, thawed.
1- 15 oz can pineapple chunks in juice, drained.
1- 15 oz can mandarin oranges in light syrup, drained.
1- Kiwi fruit, peeled and sliced.  ( I sometimes use 2 kiwi fruits, but I love kiwi)
1 pound fresh strawberries, sliced.
1- half pint fresh blueberries.
1- 12" round pan ( I like to use one that is at least 1-2 inches deep)

***For the sugar cookie dough, you can either home make it or you can buy refrigerated sugar cookie dough from the store.  If you buy it, I recommend you buy the one that does not have the sugar crystals on the top.  There is a slight taste difference.  I have made it both with homemade and store bought.  Both ways are good.  Just depends on how much time you have and what your preference is.

***On the fruit, If you do not like some of the fruits that I use to make it with, you can substitute it with any kind of fruits that you would like.  (Thus making the recipe your own.)  It is good with all kinds of different fruits, you are not limited to these. 

Making the Base.

Preheat the oven to 350 degrees.   Lightly grease your 12 inch pan. 

Put a little grease on your hands as well.  Take your cookie dough and press it out onto the bottom and up the sides of your 12 inch pan.  Bake approximately 10 to 15 minutes, or until golden.  Set this aside to cool.

In a mixing bowl, beat cream cheese and sugar until smooth.  Gently stir in whipped topping until combined.  Spread this out on cooled cookie tart.  Cover this with plastic wrap and refrigerate for 2 hours. 



Preparing the Fruit.

Cut off the ends of the strawberries.  Take 2/3 of them and cut into slices.  Dice the remaining strawberries.

Cut off both ends of Kiwi.  Then cut off the brown peel.  Cut the kiwi in half and then into 1/8 inch slices.

Open and drain juice off the mandarin oranges.  Put into a bowl or on a plate.

Open and drain off juice of pineapple.  Put that into a bowl or on a plate as well.

Rinse blueberries and put into a bowl.

Putting It Together.

Arrange pineapple, oranges, kiwi fruit, strawberries and blueberries on chilled cheese layer in any design or pattern you would like.  Serve immediately, or refrigerate for later.  Cut into wedges to serve.  I guarantee this will go fast.  Yummy!

Preparation time is about 30 minutes.
Cook time is between 10 to 15 minutes.
