Cherry Eggnog Cupcake

In this instructable I am going to share one of my favourite cupcake recipes with you. They are perfectly moist and refreshing. Store them in the fridge and they are the perfect snack in the summer.

Stuff You Need

These are the things you need:

  • ½ cup of butter
  • ½ cup of sugar
  • a pinch of salt
  • 3 eggs
  • 1 cup of flour
  • 1 Tsp backing powder
  • ½ cup of eggnog
  • 1 jar of cherries (drained weight: 350 g; about two cups)

For the decoration

  • 1.5 cups of cream
  • 1 TBSP of vanilla sugar
  • 1 TBSP Whip Cream Stabilizer (e.g. here)
  • or just some whipped cream from a can
  • optional: chocolate flakes and or cherries

Start by draining the cherries and preheat the oven to 350°F (top and bottom heat).

Preparing the Batter

Stir the butter, salt and sugar, till the mixture is creamy.

Add one egg after the other while stirring.

Mix the flour and the backing powder and alternate adding it and the eggnog to the mixture.

If you want you can add some chocolate flakes.

Add the cherries and carefully mix everything.

Place some baking cups into a cupcake pan and fill them with the mixture.

Backing and Decorating

Bake the cupcakes for about 35 minutes. Let them cool off before decorating.

Mix the whipped cream, vanilla sugar and whip cream stabilizer till you get a firm mixture.

Decorate the cupcakes with the whipped cream and if you like some chocolate flakes and or cherries.

Place them in the freezer for at least an hour and enjoy.
