Chocolate Cherry Waffle Sandwich
My creation, Chocolate Cherry Waffle Sandwich, is perfect for brunch, a special breakfast or dessert. It is an elegant comfort food enjoyed occasionally. The idea came to me when I ate a slice of European Black Forest cake.
Supplies
You need:
Waffle maker
Kitchen Aid machine
Whisk
Mixing bowls
Cup and spoon measure
Grater
Vegetable oil spray
Spoon, wooden spoon
Ingredients:
1 1/2 cup flour
3 teaspoons baking powder
1/2 teaspoon salt
1/2 cup sugar
3 tablespoons unsweetened cocoa powder
1 cup milk
2 eggs
4 tablespoons butter
1 can dark sweet cherries, 15 oz.
1 cup heavy whipping cream
Large piece of dark chocolate
Dry Ingredients Mixture
In a bowl combine flour, baking powder, salt, sugar and cacao. Whisk together.
Wet Ingredients Mixture
Melt butter in microwave. Whisk together eggs, milk and butter.
Combine Dry and Wet
Pour egg mixture into flour mixture. Stir until just combined.
Baking Waffles
Bake waffles according to your waffle maker’s instructions.
Assemble and Plate
Whip cream in an ice cold bowl. (Freeze bowl and whisk a few minutes in a freezer. This will help to whip cream fast.)
Whip in sugar to your liking. I use 1-2 tablespoons.
Grate chocolate.
To assemble the waffle sandwich, place 1 waffle on plate. Top with whipped cream and cherries. Add another waffle and a spoonful of whipped cream, cherry and grated chocolate.
