Supplies
Ingredients
- 18 Full sheets of chocolate graham crackers
- 16 oz of whipped topping (Cool Whip, Store brand, or homemade whipping cream) 450g
- 1 cup of chocolate shavings/curls (milk, dark, semi-sweet, etc.) 170g
Tools/Equipment
- 8x12 dish or pan
- Spatula
- Grater for Chocolate: https://amzn.to/3DpqwvX
Layer 1
This chocolate icebox cake is made up of a series of layers.
First, remove the whipped topping from the freezer or fridge and allow it to that a bit so it is easier to spread. Then spread a thin layer on the bottom of your dish.
I usually use my 8x12 glass dish, but a 9x13 or 8x8 will work fine too.
Next, add 6 full sheets of chocolate graham crackers and press them into the whipped topping. Follow that up with another layer of whipped topping and then sprinkle on some chocolate shavings or curls.
Use a box grater with a slicer side to make the curls. Or just use chocolate chips or chocolate chunks.
And that is layer 1.
Layer 2
Now repeat the steps. Add 6 full sheets or 12 graham cracker halves to the top of the whipped topping layer. Press them down into the whipped topping. Then add another layer of whipped topping followed by another sprinkling of chocolate.
You could leave it like this with only two layers, but I always make a third layer. If your dish is deeper you could even add more ingredients and make a 4th and 5th layer!
Final Layer
Repeat the steps again for the third and for me this is the final layer. Lay down the rest of the graham crackers, then spread on the whipped topping and follow that up with chocolate curls/shavings.
Easy as that! No baking is required.
Cover with plastic wrap and place it in the fridge for at least 4 hours or let it go overnight. You can also put it in the freezer for 2 hours if you are in more of a hurry.
Serve
I do think it tastes better the next day or even on day 2 or 3 because the whipped topping has had time to soak into the graham cracker softening them up.
When you are ready to serve it, just take a knife and cut it into squares. I usually follow where the graham cracker halves were creative 12 servings.
And I may or may not eat this for breakfast the next few days, haha.
Enjoy!
