Chocolate Peanut Butter Fortune Cookies

Ingredients for the Fortune Cookies

Dry Ingredients:

  • 1/2 cup all-purpose flour
  • 1/2 cup sugar
  • 1/4 teaspoon ground cinnamon

Wet Ingredients:

  • 1 Tablespoon water
  • 1/2 teaspoon vanilla extract
  • 2 egg whites
  • 1/8 teaspoon honey

Coating Ingredients:

  • 3 squares almond bark chocolate
  • 1 spoonful of creamy peanut butter

Add and Combine Dry Ingredients

Begin by carefully adding the flour, sugar, and ground cinnamon into a large mixing bowl. After all dry ingredients are added, take a whisk and gently combine until all ingredients are evenly distributed. This will ensure that there are no clumps of flour or sugar in your mixture.

Add and Combine Wet Ingredients

One by one, add water, vanilla extract, egg whites, and honey to the mixture of dry ingredients. Once all the ingredients are added, lightly whisk it all together until a runny dough forms. To make sure that you have the right consistency, pick up the whisk and try to make a figure eight with the dough. If the dough is too thick, carefully add small drops of water until the dough slowly runs into the bowl.

Preheat Oven and Prepare Pan

Set dough aside and preheat the oven to 350 degrees Fahrenheit. Prepare a pan by coving it with a layer of parchment paper. Make sure to cut the parchment paper to fit the pan so the cookies do not warp.

Laying Out the Cookies

After the dough is combined, use a measuring spoon to measure 1 Tablespoon of dough onto the prepared pan. Next, take a small spoon and using the back, gently smooth the cookie into a thin circular layer. In the end, the cookie should have a diameter of 3-3/12 inches. Repeat this step until all dough is used.

Baking the Cookies

After all the dough is distributed on the pans, place the cookies on the lowest rack of the oven and set the timer for 6-7 minutes or until the edges of the cookies are a crisp golden brown. Make sure to not open the oven while baking or the cookies could warp.

Writing Fortunes

While the cookies are baking, take a piece of paper, scissors and a pen to start creating fortunes. Cut paper into 2x1/2 inch strips to fit inside the cookies and write out fortunes on the small pieces of paper. Make sure to make enough for all cookies!

Filling the Cookies

After the cookies are done IMMEDIATELY take them out of the oven and remove them from the pan using a thin spatula. DO NOT LET THEM COOL! Next lay a fortune in the center of each cookie.

Forming the Cookies

Right after putting the fortune on the flat cookie, fold the cookie in half to make a taco shape with the fortune inside. Next, fold the edges inward and pinch the crease of the cookie to make the iconic fortune cookie shape. Once formed, let the cookies harden for at least 10 minutes to ensure stability.

Making the Coating

While the cookies are cooling cut three squares of almond bark chocolate and chop into smaller pieces.

Melting the Chocolate

Next place the chocolate pieces in a medium glass bowl and microwave for 30 seconds. Once microwaved take out and stir. Microwave the chocolate two more times with a timer set for 15 seconds each time. Take out of the microwave and stir to make sure all of the clumps of chocolate are melted. Once the chocolate is smooth, get ready to start dipping!

Coating the Cookies

After cookies are cooled and chocolate is smooth, dip a cookie in the chocolate. Take a fork and carefully coat the entire cookie. In the end, there should be no cookie showing. Place on a plate to let the coating harden. Repeat until all cookies are coated.

Peanut Butter Drizzle

While the coating is setting up on the cookies, take a spoonful of creamy peanut butter and place it in a small microwaveable bowl. Place the bowl in the microwave and set timer for 1 minute to ensure a thin consistency of peanut butter.

Drizzling the Cookies

After the coating has hardened, take a fork, and sip it into the thinned peanut butter. Carefully drizzle peanut butter on the cookies until satisfied. Repeat until all cookies are drizzled.
