Chocolate Peanut Butter Cookies On A Stick
There are so many things you can make on a stick! When choosing what my Instructable would be, I thought about what everyone's favorite flavor combination is. Chocolate and peanut butter came to my mind! I thought I could make a big crispy peanut butter cookie that would hold up on a stick. I wanted to fill it with chocolate to create a surprise inside! And how about drizzling it like a caramel apple? Yes! I had my idea. Here is how to make my Chocolate Peanut Butter Cookies On A Stick!!!!
Supplies You Will Need
stand mixer
mini chopper
cereal size bowl
popsicle sticks
silicone scraper
tablespoon scoop
spoon
2 baking sheets
Ingredients
1/2 cup (1 stick) butter, softened to room temperature
2/3 cup creamy peanut butter
1/2 cup granulated sugar
1/2 cup light brown sugar, packed
1 large egg, room temperature
2 teaspoons vanilla extract
1 2/3 cup all-purpose flour
1/2 teaspoon baking soda
1/2 teaspoon baking powder
1/2 teaspoon Kosher salt
1 cup semi sweet chocolate chips
1/2 cup roasted peanuts
Start With Butter and Peanut Butter
Preheat oven to 325 degrees F.
In the bowl of an electric mixer, beat softened butter and peanut butter until fluffy.
Hint:
If you forget to leave your butter out to soften, cut the butter into small pieces and it will soften in the bowl very quickly.
Two Kinds of Sugar
Add granulated sugar and light brown sugar; beat to combine.
Add Remaining Cookie Ingredients
Mix in egg and vanilla followed by the flour, baking soda, baking powder, and salt.
The Mixed Dough
Mix until blended. It comes together nicely.
The Dough
Form a rough ball of cookie dough and place on a work surface.
Cut the Dough
Now cut the dough into 8 portions.
Start Forming the Cookies
Roll each portion into a ball and then flatten. Place about a tablespoon chocolate chips in each center.
Cover the Chips
Enclose and cover the chips with dough, forming balls.
Onto the Baking Sheets
Use 2 silicone baking sheets or two rimmed baking sheets lined with parchment paper. Place 4 balls of dough onto each cookie sheet.
Add the Sticks
Center and push a stick into the bottom edge of each cookie.
Flatten Each
Flatten each cookie so they are about 1/2-inch thick.
Time to Bake!
Bake the cookies at 325 degrees F. for 15 minutes. Rotate pans. Bake 10 minutes longer.
Time to Cool
Remove from the oven. Let cookies cool completely on the pans.
Prepare the Peanuts
Meanwhile, roughly chop the peanuts. I have a mini chopper which makes it very easy to do. Place the top on the chopper and hit the top over and over until the peanuts are finely chopped. You could also place the peanuts on a work surface and cut them up using a sharp knife.
Melt the Chocolate
When the cookies are completely cooled, place remaining chocolate chips in a microwaveable bowl. Microwave the chocolate at 100% power, stirring every 20 seconds, until it stirs smooth.
Now the Fun Part!
Using a spoon, drizzle the melted chocolate over the cooled cookies.
Add the Nuts
Sprinkle with the chopped peanuts.
