Chorizo and Prawn Skewers

These prawn and Chorizo bites are an incredibly easy appetizer that everyone will love! Plus it is incredibly easy to make. They have a deliciously savoury flavour with a fresh citrus zing and they look so cute on their little skewers!

Ingredients and Equipment

INGREDIENTS

- 18 Prawns (either fresh or defrosted cooked prawns). Mine has the vein removes if you are using fresh prawns try and get these de-veined.

- 18 Slices of Chorizo

Gremolata

- A handful of fresh parsley

- The zest of 1 lemon (A couple of tablespoons of lemon zest)

- (You can also add ½ clove of garlic if you like it adds a lovely flavour)

EQUIPMENT

- Frying pan

- Toothpicks (18)

- Oven

- Oven tray and baking paper

- Fine microplane grater

- Chopping board

- Knife

Cook the Chorizo

Take the chorizo and pan fry them on a medium high heat for about 2-3 minutes (approx. 1 minute on each side)to get them slightly browned. You may need some oil if you have a non-stick pan but chorizo is quite fatty and will release some oil to help it cook.

(This helps to make the chorizo delicious and crispy, if you want softer chorizo then skip this step).

Assemble and Bake

To assemble the bites take one of the prawns and fold it over a slice of chorizo then take a toothpick and thread the prawn and chorizo onto it.

Place them on a baking tray lined with baking paper and bake for 3-5 minutes at 180 degrees Celsius (355F) until the prawns have heated through. If you are using fresh, uncooked prawns you may need to add a few extra minutes.

Make the Gremolata

While the prawns are cooking make the gremolata. Finely grate the lemon zest on a Microplane grater ensure you are only getting the yellow of the zest. Continually rotate the lemon. If you grate one spot too long and the zest turns white this can make it bitter. Then finely chop the parsley with a sharp knife. Combine the zest and parsley and chop for a few seconds to combine them together.

Assemble

As soon as the prawns are out of the oven place them onto your serving plate. Then sprinkle the gremolata over the top.

Serve!
