Cinnamon Buns

If your wanting to make cinnamon roles that taste just like the ones they sell at Cinnabon then this is the recipe for you! This recipes make 12-20 cinnamon buns depending on how thick you cut them. They take approximately 3 hours to make.

Before We Start

Before you start to make the cinnamon buns you want to make sure you have all and enough of each ingredient. To make the dough for the buns you will need 1 cup of milk, 2 eggs room temperature, a 1/3 cup of salted butter room temperature, 4-4 1/2 cups of flour ( plus extra for rolling the dough later), 1/2 a cup of white sugar, and 2 tablespoons of yeast.
To make the cinnamon filling you will need One cup of brown sugar, packed, 3 tablespoons of ground cinnamon, and a 1/3 cup of salted butter, room temperature.
For the the frosting you will need 4 ounces or 115 grams of softened plain cream cheese, 1/4 cup of butter, softened, 1 1/2 cups of confectioners suger, and 1/2 teaspoon of vanilla extract.

Making the Dough

So the first thing is to combine 2 cups of flour and 2 tablespoons of yeast in a large mixing bowl or you can use a kitchen aid mixer. In a large saucepan, combine 1 cup of milk, 1/3 cup of butter and a 1/2 cup of sugar over medium heat until the butter is almost melted. Add the milk mixture to the flour mixture along with 2 eggs and mix with and electric mixer on low for 30 seconds. Then slowly stir in roughly 2 cups of flour.

The Filling

Place the dough on a floured surface and knead as much flour as possible into the dough. Continue to knead the dough until it is very smooth and elastic.( this will take roughly 5-10 minutes) After cover the dough with plastic wrap or a tea tea towel. Let it rest, covered, for 15 minutes. Meanwhile, in a small bowl combine 1 cup of brown sugar and 3 tablespoons of cinnamon and set aside until dough has finish rising. After the dough has risen, role the dough out into a 18X21-inch rectangle on a flour surface. Spread a 1/3 cup of butter on the dough and top it with the brown sugar and cinnamon mixture.

The Finishing Stage

Starting with the long side, roll up the dough so you have an 18 inch log. Cut into 12-20 even roles. Grease a 11X15 and a 8X11 pan and place the roles in the pan. Cover the pan(s) with a tea towel and let the cinnamon buns rise for 45 minutes. While the cinnamon buns rise preheat the oven to convect bake 400 degree Fahrenheit. After the buns have finished rising put them on the centre rake and let them bake for 15 minutes or until they are golden brown.

Icing

While the buns are baking, In a large mixing bowl combine 4 ounces (450 grams) of cream cheese, 1/4 cup of butter, 1 1/2 cups of confectioners' sugar, and half a teaspoon of vanilla extract until the icing is fluffy. After taking the cinnamon buns out of the oven let them cool for 15 minutes and spread the icing on the warm cinnamon buns.
