Hello everyone,

I thought i'd share this recipe for the lightest, 100% vegetarian lunch you've ever had!

With only a few ingredients you can make these "buns" , that are quick to make, and taste great with some marmelade, or, alternatively, a slice of bacon... you name it, just about everything goes well with these things.

The Ingredients

What do you need?

100 gr. of cottage cheese

3 medium to large eggs (preferrably fresh, as the yolks will be firmer and therefore easier to separate..)

1/2 teaspoon of baking powder

Pre-heat the oven to 180 degrees Celsius.

Separate the eggs, removing the whites to a high container (measuring jug) that must be abolutely fat-free. If you're not sure, it's best to wash it again with hot water and soap first, rather than see your work go to nothing.

Mix the cottage cheese with the yolks in a bowl and add the baking powder. There is no need for the mixture to be smooth, no problem if some cottage cheese "lumps" remain.

Beat the whites till they are stiff, see the picture.

They're good if the stuff keeps standing up by itself.

Then, carefully mix the whites with the yolk mixture, with slow, scooping movements, taking care to keep as much as possible of the air where it belongs, in the whites.

Baking Them..

Put a sheet of baking paper on your baking tray and divide the mixture into six heaps, put them at some distance of each other as they will "flow"a bit.

Bake for 20 minutes. If you have the idea that they get too dark, diminish the heat a little.

You're all done!
