Cobweb Apple Soup

This is a simple and quick recipe for apple soup with cinnamon. It can be served both hot and cold. Perfect for cold autumn days, and with a little creativity, also super fun for Halloween. The color is a nice bright orange. Please note this is not very sweet, so if you have a sweet tooth, you might want to increase the amount of sugar.

Ingredients

What you need (4 small portions):

  • 4 apples (not pictured)
  • 4 dl / 1.7 cups water
  • 1 lemon, juiced
  • 1 tablespoon sugar
  • 1/2 teaspoon ground cinnamon

For decorating:

  • 4 tablespoons quark, vanilla flavor (can substitute with yoghurt or custard)

Peel your apples and cut them into pieces. I was fortunate to have a bag ready in the freezer (this is great idea if you happen to get a bunch more apples than you need at one time - but frozen apples are best suited for cooking, not eating raw). Add apples to a pot along with the water, lemon juice, sugar and cinnamon. Cook for a few minutes until apples are soft. Test softness as you go along, this will vary.

Blending - Serving

Add contents from the pot to a blender. I used a hand blender and suitable mug that came with the blender. Blend until smooth. If you plan on serving the dish cold, now would be the time to let it cool. Then add to serving bowls.

Add the quark to a decorating bag or decorating pen, and use this to form a cobweb pattern on top. If it's not Halloween, then mix it up! Done!
