Coconut Milk Rice

Hello everyone.
I'm sharing you the recipe of coconut milk rice, which is rich in taste and texture. It is a simple and easy recipe as we can make it in 30 minutes. Its one of the best rice recipe as it also contains many nutritional facts.

The Benefits of Coconut Milk

SUPPLIES

Rice - 1 cup

Coconut milk (Store bought or homemade) - 2 cups

Onion - 2 large sized

Green chilly - 3 nos

Ginger garlic paste - 1 1/2 tablespoon

Mint leaves - 1 small cup

Coriander leaves - 1 small cup

Cinnamon - 1 inch

Cloves - 5 nos

Cardamon - 2 pods

Star anise - 1

Bay leaf - 1

Salt - as per taste

Oil - 1 1/2 tablespoons

Clarified butter - 1 1/2 tablespoons (optional - Skip this and add 3 tablespoons of oil)

Preparing the Coconut Milk

Image 1 : Grate the coconut or take out the coconut from the shell into pieces and blend it to this texture.

Image 2 : Add the coconut to the blender, add some water it and blend it.

Image 3 : After blending filter the coconut milk from the mixture.

Note: You can also use store bought coconut milk.

Sauteing the Spices.

Image 1 : Take a pan add the clarified butter and oil.

Image 2 : Add the spices and saute it well.

Sauteing the Onion

Image 1 : Add the onion and saute it until it becomes translucent.

Image 2 : Add the green chilies and mix it well.

Adding Ginger Garlic Paste

Image 1 : At this stage add some salt.

Image 2 : Now add the ginger garlic paste and cook it until the raw smell goes.

Adding Mint and Coriander Leaves

Image 1 : Once the onion was cooked completely add the mint and coriander leaves to it. Cook it until shrinks and raw smell leaves.

Note : After the mint and coriander leaves get cooked you can also add some vegetables of your choice. After adding the veggies add some water and boil the vegetables. And follow the next steps.

Adding Coconut Milk and Rice

Image 1 : Add the coconut milk.

Image 2 : Now add the rice and let it boil.

Cover and Cook

Image : At this stage cover and cook the rice for 15 minutes in a low flame.

Happy Ending

Image 1 : After 15 mins turn off the flame and let the pan be closed for another 10 mins. After 10 mins open the pan and give it a slight stir.

Image 2 : Serve hot. You can garnish it with some cashew nuts.

It will be delicious even if you eat without any accompaniment.
