Blueberry Lemon Flognarde

Did you know, that without even being involved in a war between two countries, a revolution or even between two ethnic groups; that you still battle everyday. But how, you may ask? I am helpful to my neighbor, no matter what language or skin color they are. I don’t steal. I work hard to provide for my loved ones as well as myself. I teach my children to not cause violence, let alone pick up a gun to shot another person in anger. So how is it I am in a battle everyday? You go on to say, considering the theme of this post, “Besides, I don’t live were there are radical groups or radical thinking people?”

All of this my be true. But the Radical groups are really closer than you think. They are so small,  it is hard to see them. Now your looking around your desk were your computer sits, wondering, “Is it the dust?” Or you look up at the lamp to see if it could be the cob webs that form from the heat of the light bulb. No it’s none of that. I mentioned they are hard to see, microscopic as a matter of fact.

Do you have a mirror close by? Look into it. What do you see? Look closer, do you see yourself the same as you did say 5 years ago or 10 or even 20 years ago? What has caused the changes in what you see in the mirror is the Free Radicals in your body.

Do you know how these radicals come about? They don’t enter your body while you sleep or from what you eat. According to Wise Geek, “Some molecules in our body are unstable. They do not have an even number of electrons, so they are always searching for an extra electron they can "steal" to become stable. Out in the world, this is a normal process, but in the body, it can result in unnecessary and unwanted damage.

Free radicals are "free" because they float around until they stabilize, and "radical" in the sense that there are a wide variety of molecules from which they can take an electron. The damage doesn't stop there, however, as the new molecule, say a piece of a cell wall, is now also missing an electron and has become another free radical. This snowball effect can wreak havoc on healthy tissue”. --www.wisegeek.com 

An even number of electrons is three. But these Free Radicals only have two and as Wise Geek stated, these types of molecules are always looking for an extra electron. That is battle we are in. As they are searching, they are damaging our body tissue. Though the body does have away to get rid of these radicals, but the mechanism is not fast enough.

That is were the blue bomb comes in. Actually, it is called a super fruit. Like cherries, raspberries, mango, kiwi, strawberries and blueberries. These fruits help the body fight these free radicals.

The recipe of the day has one of those fruits and it is the blueberry. Here is what you will need:

1 tbsp. unsalted butter
6 tbsp. sugar, divided
3/4 cup fresh blueberries
3 eggs
1 1/3 cups milk
2/3 cup flour
1 tbsp. freshly grated lemon zest
2 tsp. vanilla extract
1 pinch salt
½ tsp. ground cinnamon
2 tbsp. powdered sugar

These ingredients when put together will make us, Blueberry Lemon Flognarde. It is not a custard, like Crème Burlee or Spanish Flan but rather a fruit-filled batter like cake. This is considered a French dessert. It is not really that sweet with only 6 tbsps. of sugar and it has three eggs. So it could even be something for breakfast. Those three eggs provide 22 grams of protein. But only if you ate the whole Flognarde. There’s about five servings, so that would be about 3 to 4 grams of protein per serving

First get a lemon and make some zest. You will need 1 tablespoon.

If you don’t have a lemon and need to run to the market, than do so. But save the rest of the lemon for another recipe by doing this: After squeezing lemons or oranges do not toss the peels. Freeze the peels or rinds and whenever you need zest of a lemon or orange, you can grate it from the frozen rinds. It will save a trip to the store just
to buy a citrus fruit for a small amount of zest. This tip works well if you make cheesecake often in your kitchen.

OK now that you have the zest, set it aside. Preheat your oven to 375 degrees. Prepare a 9″ pie pan or tart pan with 1 tablespoon of soft butter. Smear the butter over the bottom and sides of the pie pan. Now arrange the blueberries to cover the bottom of the pie pan and sprinkle 3 tbsp. of sugar on top of the blueberries.

In a food processor, combine the remaining 3 tbsp. sugar, eggs, milk, flour, lemon zest, cinnamon, vanilla, and salt. Process until smooth, about 2 minutes.

Once processed pour the batter over the blueberries in the prepared pie pan.

Bake in the pre-heated oven for 45-55 minutes or until firm and lightly browned. Let stand for 5 minutes then dust with powdered sugar. Slice and serve warm. Enjoy your flavorful Blueberry Lemon Flognarde.
