Confetti Mini Muffins
These cute, tasty, and super fun mini muffins make a great breakfast on-the-go! Not to mention they are gluten free and contain no flour, oil, butter, or sugar (well...except sprinkles which don't count...)
Confetti Mini Muffins
INGREDIENTS
1 scoop ABOUTTIME birthday cake whey (can sub vanilla) (30g)
1/2 cup canned white beans (130g)
1/8 cup unsweetened applesauce (28g)
1 T egg substitute (15g)
1 T unsweetened vanilla almond milk (15ml)
1 t vanilla
1/2 t baking powder
sweetener to taste (4 packs)
sprinkles (not optional!)
INSTRUCTIONS
Drain and rinse beans
Puree beans, applesauce, milk, egg, and vanillaStir in everything else except sprinkles
Coat muffin pan with nonstick spray or use liners
Pour batter and top with sprinklesBake at 350 for about 10 minutes
