Supplies
Ingredients:
- 15.25 oz cake mix (any cake mix will work) (432g)
- 8 oz container of Cool Whip (226g)
- 1 large egg
- Powdered Sugar, doesn't need to be exact, somewhere around 1/2 cup will be enough.
Equipment:
- Sheet pan or baking sheet
- Parchment paper or silicone baking mat
- Wooden spoon
- Hand mixer or stand mixer with paddle attachment
- Sieve - optional
- Spoon/Tablespoon or small cookie scoop
Egg and Cool Whip
Remove the cool whip from the fridge or freezer 30 to 45 minutes before you want to use it so it can soften.
Add the egg to a large bowl along with the cool whip and mix until combined.
Use a sturdy spoon or hand or stand mixer.
Add the Cake Mix
Add the cake mix a little at a time mixing it in. A stand mixer with a paddle attachment works great, but you can certainly do it by hand. To ensure you don't have any lumps you may want to use a sifter or sieve with the cake mix.
The dough will be thick and very sticky. Cover the bowl with a lid or plastic wrap and chill in the fridge for at least 30 minutes.
Bake Those Cookies
Preheat the oven to 350F/176C.
Once chilled, scoop out some dough and roll it into a ball, then roll that ball in a bowl of powdered sugar and place it on a sheet pan or cookie sheet lined with parchment paper or a silicone baking mat.
NOTE: It will be extremely sticky. You may want to add powdered sugar to your hands first then roll the dough into a ball then put it in powdered sugar. A little bit of oil on the hands will also work to keep the dough from sticking too much to your hands.
This will make about 24 cookies. Once rolled they are rolled bake them in the oven for 12 to 14 minutes. They will spread out and crack and look just like crinkle cookies. That is because these are a type of cake mix crinkle cookie.
Allow the cookies to cool for a few minutes on the pan then transfer them to a wire rack to cool the rest of the way.
Enjoy!
