DIY Quick Gluten Free Rice Crispy Treats

Today you will be learning how to make DIY Gluten-Free Rice Crispy Treats! Let me just say now they taste amazing, especially for being someone that has to eat gluten-free for medical reasons.

It is a simple and quick tasty treat that you can make in only about 45 minutes!

*At the time I am creating this, all products used are Gluten, Dairy, and Soy free, but before making this please make sure the ingredients you are using don't contain allergies you might have*

Gather Ingredients

First, you are going to need your ingredients. You may use different variations of what I used (like different brands) but these are what I used:

  • One Degree Organic Brown Rice Crisps Cereal
  • Pure Honey
  • Enjoy Life Mini Chips (Optional)
  • Cento Olive Oil

Other things you will need:

  • Mixing bowl/Mixer
  • Some kind of glass container to put the rice crispy in after it is mixed (needs to have a lid too for best results)
  • A freezer

Add Rice Crisps to Mixing Bowl

Pour the rice crisps into a mixing bowl.

Here is how I think of when making it in terms of measurements: For this ingredient, think of how much would typically be in a cereal bowl for breakfast. That amount will make about 1-2 rice crispy treats.

However, don't make too much for each glass container you will be putting this in. It shouldn't go any higher than 2 inches because then it will stick and it will be very difficult to get the properly formed rice crispy out.

Add Honey

Now you are going to add the honey. Start off with just a little, and keep adding it till you think it is enough to hold it all together without being too much honey.

Add Chocolate Chips (Optional)

Just for added sweetness, you can do this but you do not have to for really good rice crispy treats. If you do add these, you can add as much or as little as you would like - it is completely personal preference!

Mix and Oil the Glass Container

Now you are going to want to mix it all in the mixing bowl on medium for about 1.5-2 minutes. After that, it should be a smooth texture with the honey (as opposed to just like cereal sitting in a bowl). If you don't quite have that texture yet, just keep adding a little honey and mixing till you do.

While it is mixing you can also oil the glass container. Make sure there isn't too much extra on the bottom and you are going to want to make sure you oil the sides at least 2 inches high or else it will stick!

**Important Note** This will not be the texture of a typical rice crispy treat at this point. So don't add honey in hopes to make it solid like a Rice Crispy Treat. That will come later on. Right now you just want it to be the texture of what you think a "Melted Rice Cripsy Treat" would be like.

Pour Into Bowl and Place in Freezer

At this point, you will now want to pour your "soon to be Rice Crispy Treat" into the oiled bowl. Make sure that it is as evenly flat as possible. Once you have done that, put the lid on and place it into the freezer for as short as 30 min (usually I do that) or as long as a few hours.

At this point, you are putting it into the freezer. Over the time of it being in there, the honey will freeze, causing it to hold all of the pieces together. It is like we are going from a "Melted Version" in the mixing bowl to a "Frozen Version" which is what you want to eat.

Take Out and Enjoy!

Now you can take it out and it should look pretty good! You are going to want to cut it up right away and wrap it in pieces of wax paper and put it in ziplock bags and put those into the freezer. Because of what happened here in this project, if you let it thaw, it will be hard to get to form back into a rice crispy treat so it is better to just keep it cold.
