Dairy Free, Gluten Free, Egg Free, Nuts Free, Brownies

My journey through cooking for allergic people begun two years ago when my newborn was diagnosed with dairy allergy, a year later we found she is alergic to eggs and nuts. And at the same time I made a friend who has celiac desease. When we get together it's such a challenge to find food that they can eat and we enjoy. Many gluten free dessert recipes use almond flour instead of regular flour. But with my daughter's newest allergy that's not an option.

Then I found some brownie recipes that instead of flour use beans. I tried at least 3 different ones and they all are yucky. And then I got it, how about adding corn instead! There's a traditional Mexican dessert that my mom used to bake called corn bread. (Yes we Mexicans make everything with corn: tortillas, soups, salads, desserts and even drinks) So I made a mix between my favourite brownie recipe and my mom's cookbook. And after some tests this is the perfect recipe.

Gather Your Ingredients

1 cup brown suga

r1/2 cup white sugar

2 ripen bananas

2 teaspoon vanilla extract

1 teaspoon sal

t2/3 cup unsweetened cocoa powder

2 cup cooked corn niblets

6 tbsp coconut oil

Mash the bananas in a bowl.
Add sugar, whisk well for 1-2 minutes.

Add cocoa powder, salt and vanilla. Whisk again.

Blend

On a food processor (or blender) put the corn and the melted coconut oil. Blend until you have a paste.

This step is very important, so take your time, if you don't have a food processor use your blender and add 1 tbsp of water, (if you add water the cooking time will be longer) blend on a low speed for one minute, then make it go faster and faster until you see everything is well blended.

Finally add the corn paste to the bowl and mix.

Pour batter into prepared pan. I used two loaf pans, it cooks better than with the squared pan.

Smooth the top out. You can top it with chocolate chips. For dairy free, nut free chocolate chips "enjoy life" is my favourite brand.

Bake at 180C for 40 min or until the centre is just set to the touch. Don't do the toothpick test, as this brownies are fudgy the toothpick will come out dirty.

Let it cool 15 min before cutting.

They´re delicious with coconut whipped cream.
