Date Cake With Pistachio & Coconuts Topping
Why do we waste our money on buying stored cakes from a market or a coffee shop when we can make them ourselves? There is nothing more delicious and fun than making a homemade cake. Homemade cake is always fresh and tastes much better than a market cake that usually has artificial and cheap ingredients just to make it good enough to sell.
In this Instructable, I’m making a delicious date cake with a yummy mix of coconut, pistachio and chocolate topping. The cake recipe is super easy to follow, takes less than an hour to make and most importantly guaranteed tasty flavors.
Note: Preheat the oven to 360 F before making the cake.
Tools
- Blender
- Cake pan
- Medium-sized pan
- Large bowl
Ingredients
1. Cake Ingredients:
- 15 dates
- 1 cup of boiled water
- 2 cups of flour
- 1 cup of oil
- ½ cup of sugar
- 1 tablespoon of baking powder
- 1 tablespoon of cinnamon
- 1 teaspoon of baking soda
- 1 teaspoon of vanilla extract
- 1 can of Nestle cream (225 ml)
- 2 eggs
2. Sauce Ingredients:
- 1 tablespoon of salted butter
- ½ can of sweetened concentrated milk (397 g)
- 1 teaspoon of ground coffee
- 1 can of Nestle cream (225 ml)
- 1 tablespoon of cocoa powder
3. Topping Ingredients:
- ¼ cup of coconut flakes
- ¼ cup of ground pistachio
Add Pitted Dates to the Boiled Water
Remove the pits from the dates then add the pitted dates to the cup of boiled water. Let the mixture steep for 15 minutes.
Mix Dry Ingredients
In a large bowl whisk together flour, baking powder, baking soda, and cinnamon until well combined.
Mix the Rest of Cake Ingredients
In a blender place the eggs, oil, cream, sugar, vanilla and the pitted dates with water. Mix the ingredients until they are thoroughly combined and smooth.
Pour the Mixture to (step 4) Bowl
Mix well until you no longer see dry ingredients.
Pour the Mixture Into a Cake Pan
Place the cake pan in the oven for approximately 25 minutes.
Note: poke the cake with a toothpick, then remove the toothpick. If nothing sticks, then your cake is ready.
Let the Cake Cool Down
Let the cake cool down then flip into a plate.
Add All the Sauce Ingredients to a Pan
Stir the sauce ingredients consistently over a low-medium heat until you get a brown liquid chocolate sauce with no lumps. Continue stirring for approximately 7 minutes.
Toppings
- Pour the sauce on top of the cake.
- Add the coconut flakes and the ground pistachio on top of the sauce.
