Prepare Fire

This can be fun, but be careful not to burn down the place! It takes about 3 hours to burn down the wood to ash so start early.

Cow Head

I purchased this from my local meat market. Ran me about $40.

Ingridents

Chop onions, garlic, and slice lemons for stuffing and outside rub. Also added parsley, pepper, salt.

Preparing the Pot

We added apple juice alittle orange juice and more seasoning. Juice is added to prevent the head from not drying out We wrapped in foil and dropped the head in the pot.

Dropping the Meat

Pit should look all grey, I threw in a few last minute logs, but they are not necessary. We left the meat in and covered for 9 hours. The picture with the rope was an easy way to drop the pot in without getting too hot.

Covering Pit

I had my pit made with a cement lid. Place lid and make sure not smoke escapes. This ensures all the heat is sealed in and cooking your meat. This pit works much like a crockpot.

Pulling Out the Head

Uncover after 9 hours or so. The meat just falls off the bone. Sooooo good....enjoy!
