Dropped Scones
This is an old traditional Scottish recipe,
I Know I Know.. they look like a pancake and their cooked the same way.
They are normally cooked on an "Iron Girdle" or as it's known in the rest of the world
A Griddle.
They get their name "Dropped Scones" as the cook drops a heaped table spoon of mixture onto the Girdle.

The Mix
Their are variations to this recipe.
Some people use Butter, some use butter milk, most use self raising flour.
Some people even throw in sultanas, raisins or chopped dates.
This is the standard scone mix from Aunt Peggy....
1 1/2 cups of plain flour.
1 1/2 tsp baking powder.
Pinch of salt.
2 oz caster sugar.
3 fl oz (100ml) milk
2 medium eggs.

The Batter
Combine the milk and eggs in a jug,
mix the flour, sugar, salt and baking powder in a bowl.
add the egg mixture, and stir to a thick sticky paste.
I let it sit for about 15 to 20 minutes.

Cook Em Up
Heat a heavy based pan or Griddle to a medium heat.
smear with butter or vegetable oil.
Drop heaped table spoons of batter into the pan.
Cook on each side for about 3 to 4 minutes.
Just watch for the bubbles rise through the mixture.
Serve them with Butter, Jam, Maple Syrup, or whatever you fancy.
