Drying Jalapenos in a Toaster Oven

I've been wanting to dehydrate jalapenos for a while, but lack a dehydrator. I was going to dry them in the oven, but it occurred to me that my toaster oven has lower temperature settings. I also thought that it's smaller size might be beneficial in some way. I found using the toaster oven to be much easier to keep an eye on than and easier to work with in terms of pulling things in and out to look at.

Tinfoil/parchment paper (this stuff is awesome for toaster oven drying)

Knife/corer

Clean the in and outside of the jalapenos and then slice them however you like. I Started with big chunks, but eventually sliced the chunks into thinner strips. Let the pieces dry on a paper towel for 20 minutes.

I unintentionally bought this dual sided parchment paper/tinfoil that ended up being very cool. I put the tinfoil side down and placed all of the jalapenos on the parchment side. I set my toaster oven to 150, but after about 3 hours increased the temperature to 200. It took about 5-6 hours to for the pieces to fully dry. Had I cut them into thinner strips to begin with, it probably wouldn't have taken as long.

When the pieces are fully dried, remove from toaster oven and let cool. The dried jalapeno are now ready to be used in your recipes. Store in an airtight container or freeze until you're ready to use.
