EASY PEASY LEMON PIE
This lemon pie is an easy refreshing recipe that you can take anywhere. It does not require many ingredients. It is so delicious that it is hard to eat just one piece. It can be substituted with key lime instead of lemon.
Supplies
Food processor
Mixing bowl
Measuring cup
Lemon zester
Pie pan
Oven
Ingredients needed for Graham cracker crust
1 and ½ cups of Graham cracker crumbs
1/3 cup of white sugar
6 tablespoons of butter, melted
Ingredients needed for pie filling
2 cans of sweetened condensed milk
½ cup of light sour cream
¾ cup of lemon juice
Zest from 2-3 lemons
Preheat oven to 375
Preparing Crust
Place Graham crackers in food processer to ground up. If you do not have a food processer, you can use a plastic bag and rolling pen to crush. Other option is to buy a premade Graham cracker crust.
In a bowl, mix Graham cracker crumbs, sugar, and butter until well mixed.
In a 9” pie pan, place mixture and press down to cover bottom of pie pan and sides.
Place crust only in oven and bake for 7 minutes
Allow crust to cool for 30 minutes.
Reduce Oven Temp to 350
Preparing Pie Filling
In a bowl, pour in sweetened condensed milk, sour cream, lemon juice and zest. When zesting and slicing lemons, be sure and wash and be room temperature. Also, only zest yellow part because the white can be bitter. Mix thoroughly
Pour filling into cooled crust
Baking Pie
Bake for 10 minutes at 350
Cool pie on counter for 30 minutes
Can place lemon slices on top for garnish
After cooling on counter, place pie in refrigerator for at least 3 hours to set
