Easy Blueberry-Lemon Cake

With just a simple and in-expensive cake mix you can make a delicious summer (or anytime) treat with a few alterations. The outcome is light and fluffy yet incredibly moist with a delightful blend of fresh and fruity flavors. This recipe is also modified to be egg-free but I imagine you can also follow the box instructions with eggs if you like. The key to all my Instructables is to try and find cheap and easy ways to make fun and exciting desserts, I hope you enjoy this Instructable for a fresh and fun cake or cupcake.

Ingredients

White Cake Mix
Plain or Vanilla Frosting
1/3 Cup Vegetable or Olive Oil
Water
Ripe Frozen then thawed Banana
1 Cup Blueberries
Lemon Juice

*You will also need a Food Processor or Blender for the Blueberries

Blend Your Berries

Measure 1 cup of Blueberries (more if you like) and blend them in your food processor or blender.  Add a tablespoon of Lemon Juice into the mixture. Once you have the berries processed pour them back into your measuring cup. Check your cake mix instructions and pour enough water into  your berry blend to equal the amount of water it calls for. (So you will be substituting most of the water for the berry juice).

Mix the Cake

Go ahead and pour your cake mix into a bowl, add your berry blend (for my mix it was a total liquid amount of 1 1/4 cup). Add your oil (my mix called for 1/3 cup) and add 1 whole frozen then thawed ripe banana if you want to replace the eggs, otherwise add your eggs as it calls for them.

Baking

Prepare your pans, I used flour and Crisco but I'm sure for cupcakes Pam or something similar would work fine. You can also make this as a cake if you prefer.  

To bake 12 average sized cupcakes I set my oven to 375 degrees Fahrenheit  for 15 minuets.  Depending on the size of your pans, or if you do a cake instead,  this of course may vary.

The Lemon Icing

To really make these cakes special and 3 tablespoons (more or less to taste) of lemon juice to a regular can of store bought vanilla or plain icing.  You can also add food coloring, if you want, to enhance the yellow/lemon look. If you really want to, you could of course use a real lemon and then garnish your cakes with the zest, I stayed with the juice since i didn't have a fresh lemon on hand.
