Easy Oven Pancake

Thank you so much for reading this recipe! This easy, quick, single serving breakfast is perfect for slightly more laid back mornings. With a total of four ingredients that most people have lying around the house, this is a budget friendly meal that can be sweet or savory. It would also be wonderful for sleepovers.

Supplies

Ingredients:

  • Butter or coconut oil, for greasing the pan (not shown)
  • 1/2 cup milk
  • 2 large eggs
  • 1/2 cup milk
  • Pinch salt

Tools:

  • Pie pan
  • Assorted measuring cups
  • Small metal bowl
  • Whisk
  • Pastry brush (optional)
  • Knife

Possible toppings include:

  • Lemon juice and powdered sugar
  • Maple syrup and butter
  • Sausage
  • Celery
  • Broccoli

Prepare

Place a scoop of coconut oil OR a slice of butter in the center of the pie pan. Preheat the oven to 425 degrees.

Mix the Ingredients

Whisk the milk and the eggs together in the small mixing bowl. Add the flour and a pinch of salt, mix well.

Bake the Pancake

Put the pie pan with the coconut oil OR the butter in the oven for 3 minutes. Take out and use a pastry brush to coat the entire pan, bottom and sides. Pour in the batter, and bake for 15-20 minutes, until golden brown and puffy.

Slice into quarters and serve with desired toppings.
