Easy POTATO CURRY Filled Puffs (Vegan)

This is a delicious, easy to prepare dish that will not take a lot of time. It is like a veggie pot pie that is filled with potatoes, carrots, peas, onions and seasoned with curry.  I tasted one that was made at a deli and thought to myself : "I can make this at home"... so this is what I came up with and it was worth the effort.   EASY is again the key word. If you are feeding a crowd, double or triple the recipe. One pastry is (with soup or salad) is a filling meal.  All ingredients are things you probably have in your refrig/freezer/pantry.  Very simple to put together.

INGREDIENTS:
10 small red Potatoes (or 2 Russets are fine)
1 Carrot
1/2 of a Onion
1/3 Cup of Peas (I used frozen)
Cooking oil ( I use Sesame)
1 box of Pepperidge Farm frozen Puff Pastry 
Tamari
Indian Curry spice
Pepper
Salt


Prep Work

Before you start anything, take out (from the freezer) the Pepperidge Farm Puff Pastry. It must be thawed for at least 45 minutes before using.   Preheat oven to 400 degrees.

Chop Veggies

Peel and chop potatoes.

Dice

Dice onions and carrots.

Steam Potatoes

Steam the potatoes until tender - 10-15 minutes.

Saute the Veggies

Whle the potatoes are steaming, put 1 Tablespoon of (untoasted) sesame oil in a pan. Saute onions, add carrots, and peas. Add soy sauce for a slight salty taste.

Potatoes Done Steaming

Stick a fork into the potato to see if it is done. Lift steamer out of the pan, throw the steam water away and put potatoes back in the pan.

Mix

Mix the cooked veggies with the steamed potatoes. 

Season Filling Mixture

Season to taste with salt, pepper, curry powder. Toss together.

Working With the Puff Pastry

There are 2 sheets of puff pastry in the box. After 45 minutes of thawing, it is ready. Unroll one sheet and cut it into 4 pieces.

Filling

Spoon a good amount of filling on to the quarter piece of puff pastry.

Fold Pastry

Fold corners together to meet at the middle.

Seal Edges

Close up the pastry by pinching it together so it is sealed tight.

Squish Together

Squish (is that a real word?) the pastry together so there are no points sticking out.

Repeat

Repeat this process (filing, sealing, squishing the puff pastry) This one box of puff pastry will make 8 babies. Place it on a baking sheet.  I lined my cookie sheet with parchment paper, but it is not necessary if you don't have it on hand.

Bake

Bake it in a preheated 400 degree oven for 25 minutes. (Time depends on how hot your oven runs) Check on it after 20 minutes. To be done, it must be nice and brown on the bottom and light golden and crusty looking on the top. Leave it in the oven until it looks done.

Done!

Take out of the oven and let it cool till warm.
