Eggnog Pound Cake

Eggnog is perfect for the holidays, in any form. This flavorful eggnog pound cake is not only delicious, but incredibly easy to make!

I'm a made-from-scratch purist, and was surprised to see recipes calling for some boxed cake mix.  But, after consulting many sources, and doing some taste tests, this seems to be the way to go. Shhhhh... let's keep it our little secret  ;)

Ingredients

You'll need:
  • 1 box of yellow cake mix. The butterier, the better
  • 1 1/2 cups eggnog
  • 3 eggs
  • 4 tablespoons butter, softened
  • 1/2 teaspoon vanilla extract
  • 1/2 teaspoon freshly grated nutmeg
  • optional: splash of burbon, rum, or whatever else you splash in your eggnog
And while it is possible to make this batter without one, a standing mixer is ideal. You'll also need a bread loaf pan, or a bunt cake pan.

This recipe is so easy, it's embarrassing:

Combine all ingredients in the mixer, and put on a medium speed for about 4 minutes. The batter should get a bit thicker and glossier as you keep mixing it.

That's it - batter's done. Taste test as you go, because it's just so gosh darn tasty.


Bake and Serve!

Pour batter into a buttered pan, and bake at 350 for 40-45 minutes. 

You'll see it rises pretty quickly after putting it into bake. If the top looks like it might burn before the inside is fully cooked, cover with tin foil.

Once it's fully cooked, remove from the oven, and let cool. Then simply pop out of the pan, slice, and enjoy!

This goes well with a simple glaze, too, if you're feeling ambitious, or need to impress at a holiday party.
